You might check out Ola's scripts. Lots of people use them instead of maintenance plans

Visual Studio installs SQL Server Express as part of it's package.
The .\SQLEXPRESS is a named instance. The MSSQLSERVER should be the default instance you installed.

If you use Configuration Manager to assign the account, it should add the rights.
If you use log shipping, the account will need read/write access to the folder where it stores...

Be aware that indexed views are good, but if you use them, you are increasing the load on your database. This view has to be maintained whenever you change data...

I've not had an issue with service accounts and saving passwords, except when I have shared accounts.
Make sure that you pick a domain account that DOES NOT have "change password...
