Too bad you might be also missing out on Parallel index operations which are available only in SQL Server 2005 Enterprise Edition and later, not just partitioning.

I've experienced this before, could've been due to sql service account password reset after the mirroring was established.

Resolved by restarting the instance that had the password changed, which was luckily...
