We have 250+ instances
a handful are v7.0
about half are SQL 2000
about half are SQL 2005
we have no plans for SQL 2008 and are waiting until SQL 2010

Striping will only help if your I/O subsystem can handle it.
I have done extensive testing over the years and have found that 4 threads usually gives me the best performance....
