Count(*) counts all the rows in the result set. Select * returns all columns for the rows in the resultset.

If the count is changing it's probably there are inserts...

I discounted Page splits/sec because page splits are also caused by INSERT statements, and therefore if you wanted to measure the rate at which UPDATE statements cause data...
