So what value do you actually set the Maximum server memory (in MB) to? It defaults to 2147483647.
Typically, I leave 10% or 4GB for the O/S. More if there...

On my SQL2014, in Scenario 1, running the verify query shows 0 percent completed while the encryption is happening on the Secondary.
