    Put them in a role that doesn't have access to anything they shouldn't have access to.

    Edit: That's the most effective way to do it that I know.

    This would all be possible with dynamic SQL and querying the schema tables.

    Querying sys.tables and sys.columns, you could pretty easily generate create scripts for tables missing from the target database....

    from dbo.Numbers;

    That will give you the first and last date of every month. You can join data to...

    That has some data on the use of those system procs and what they're for. Google/Bing/whatever for more.

    If the database is in Compatibility 90, you can check the Schema Changes report. You might also find what you're looking for in the default trace.
