It's not the way. It works, there are many other ways, including Ole's merge (2008 and above), if exists with elevated isolation level and locking hints, etc.

Unless you have a trigger or something that's storing the old values somewhere, you can't. SQL doesn't automatically keep historical values around.

If the first select returns no rows then @Valor will be null at the IF statement. There is nothing in the select inside the IF that prevents nulls.

You can't. All data modifications lock.
Keep the transactions as short as possible, make sure the indexes support the modifications (deletes and updates) and consider one of the snapshot isolation levels...

Nomal, expected behaviour. If SQL is using too much memory, reduce max server memory slightly. Maybe to 5.5GB.
