Follow the above advice and Re-test everything! Especially beforehand on the 64-bit server if you can. Check alerts, mail, other things that might be set up on the SQL 2000...

Set up a Profiler trace (or better yet, server side trace). You can search in Books Online under Profiler (http://msdn2.microsoft.com/en-us/library/ms173757.aspx)
