I thought on active node and can accept connections and function normally while we install on passive. Can someone clarify

justify what???
each instance whether default or named require unique IP and virtual network name. The cluster group IP and network name are for explicitly that, the cluster group.

If my quorum becomes unavailable the whole SAN is just as likely unavailable too and it doesn't matter if the cluster is running because my SQL won't be.
IMHO...

Sure, node and disk majority are the default and the easiest to implement, go with what you're comfortable on.
Since your OP raised concerns around the quorum disk and it's sizing...

I just see the letter of mount point and not underlying disks in the instance list of above counters
you're looking for volumes not disks. They are not actual disks...

MSDTC and quorum are metadata drives, they should both be around 1 GB in size. Carve them out of the shared storage, they have no performance requirement.

The later SQL server 2005 installers have a /passive option for updating passive cluster nodes. Even so, what you have detailed above seems perfectly reasonable.
