I've had to do the delete/recreate thing several times in the past (thankfully not in the recent versions of SSIS though).
Can you elaborate on that a bit more?

It actually has something to do with the fact that I grouped things first. If I collapse the group first, then collapse the container, the whole thing buttons up...

Not really.If you click the control flow tab, in the toolbox under Control Flow Items, I see it as the fourth item, "Sequence Container"

Just open the filesystem task edit and reselect the variable and ok out of the editor.

On your filesystem task set delay validation to "True". This will get rid of the error or you can initialize the value of the variable to something.
