Why can't you use Availability Groups (I assume that's what you mean by AlwaysOn)?

You have to remove the database from the Availability Group, perform the restore in the usual way, and then put it back into the AG.

Does your maintenance & monitoring database do anything on the system databases? That might inform your decision.

Yes, you can create single node availability groups. Prior to SQL 2017 you need a Windows cluster still (again, can be a single node cluster).

I think if you can make the parties inclusive, you might as well. Hanukkah, Kwanzaa, Christmas, (late?) Samhain, Eid, random-mid-winter-made-up-whatever. Sure.
