You can, however, script the 2005 database, create it in 2000 and then export the data. As Adi stated, you cannot restore a backup to an older version.

It depends. Use perfmon and profiler for watching the metrics for the apps/server and what statements are being called to try and catch poor performing queries. Look at your hardware...

Personally, I don't like MAXSIZE unless you're really limited on disk space, in which case you should be proactively monitoring growth and determining when you may run out of space...
