I am trying to find what TCP/IP port the a current SQL Server 2000 was installed to listen on.
I am also tring to find something that will tell me when the software was loaded on the server.

Use the Server Network Utility on the server, it should tell you what port. This can also be reached by using Enterprise Manager.
