We have our SQL 2K on a Win2K O/S database on a one drive in a SAN. I am adding two new drives to make a Mirror RAID set. I need to move all of the databases off the single drive on to the new Mirror Set. Should I use "Backup" on the drive, change the drive letter. Restore to the new drive Mirror. Any suggestion or warnings in the process? Advice please.

If you only have a few I'd recommend going with detach/attach. We've got several articles on the site that discuss it and there is code in one (mine of course!) that will do a bulk attach.

backup restore or detach/attach are both easy. I'd do the detach/attach if this is a one time thing.

I agree but also for safety do make a standard backup to tape or file and move of the server. And test it on another system before you do anything. If the files or the backup becomes corrupt and you have wipped anything then you will have a major issue on you hand.
