When you view text fields it uses carriage returns/line fields in the text to split the view of the text onto multiple lines. You can't see the other lines of the text unless you either:
click the cursor in the field (as if to edit it) and move the cursor down.
left click on the 'row height adjusting line' (between the row numbers) and drag down to make each row big enough to show the multiple lines in the text field.
By the way, if you want to add a new carriage return to the text, hold down the Ctrl key when you press the Enter key.
