What is the best way to configure log shipping of many (100's) of databases to offsite location? I am concerned about setting up a job (using maint plan) for each database? Not sure why it does not allow you to select (all databases) in the maint plan? Should I configure my own custome job? Anyone who has any experience with this would be greatly appreciated.

What’s your main goal here, If you just want to ship the data bases I would just backup the databases and restored on other server and take care the logins part. Where as if you want constant updates for 100 DBs, you need to consider your server performance issues
Yes you have to create a maint plan for each of the databases that you want to log ship. Even if you the system procedure instead of the wizard, you will have to do it for each DB.
