Whenever I try to open Activity Monitor through SSMS on a particular instance, I'm greeted with the message - "Category does not exist."

This happens only on this instance, and for any client.

What is the OS?

are there other servers being managed by this central server that are > SQL Server 2008 RTM? My first recommendation would be to get that server patched.

That "could" be your problem in that you are using 2008 R2 version of SSMS with 2008 server.
