You could always use any of the STRING manipulation functions available like substring.

And also, assign default values to dimension entities. Not displaying the 'Unknown members' will just hide the dim(s).

SMT is not the best approach to deliver notification emails. I would recommend you build a custom code that suits your need. That is far easier also manageable.
