What error message are you getting when you are trying to drop the stats?
How did those stats get created?

It's gonna give the same error wether you select from it or try to destroy it... can't find the object
.

The create table part worked. But the trigger itself cannot find the misspelled object and throws you a can't find object error. There's no way that 2nd obejct was created...

UPDATE _FinalFlat SET
LargestTicket = B.LargestTicket
FROM _FinalFlat A
INNER JOIN
(
SELECT
AcctNo, MAX(TransAmt) as LargestTicket
FROM _FinalTrans
GROUP BY AcctNo
) B
ON A.AcctNo = B.AcctNo

I'm pretty sure it wasn't created.
Check in the list of tables and I'll bet you won't find it.
or in here : Select * from INFORMATION_SCHEMA.TABLES

And does dbo.AuditLog exist?
Maybe the table was created with a different owner (no clue how but you seem conviced)... or maybe it just wasn't created at all!!

May be obvious for some but not for me... Are the joins performed much faster if you use 2 filegroups or if it's just a tad faster (like 10%)?

You'd need to put a falg in a separate table, then have the application poll that table every X minutes to see if it needs to refresh. Then act accordingly.

Have you tried this?
UPDATE INS1
SET INS1.IsLastOfDay = 0
FROM tbl_NSP_Inspection AS INS1 INNER JOIN tbl_NSP_Inspection AS INS2 ON (INS1.InspectionUID = INS2.InspectionUID)
WHERE (Date logic goes here)
AND (INS1.InspectionUID = @InspectionUID)
