Installing SSMS doesn't stop the database.
If your server is so important, you shouldn't install client tools on it, but on a seperate client computer.

Open up the 2005 project with BIDS 2008. An upgrade wizard will start which will guide you through the process.
Give special attention to lookups and script tasks/components.

In the list of software programs in the control panel, do you see "Microsoft SQL Server 2008 Native Client"?
