Try to switch to Bulk Logged recovery model and take frequent Transaction Log backups. This would do minimal Logging and truncate the TL.
Normal updates are fully logged...

Dump (backup to mark as reusable) yes, but why shrink? It'll grow again on the next batch and take time...

you cannot do a covering index as the limit is 16 columns,
The 16 column limit is only on key columns, not on include columns.
