Several ways you can checkDB a VLDB (though 500GB is no where near a VLDB. It's medium-large these days).
You could restore the backup to another server and run CheckDB there....

I would wait for 2012. SQL 2008 was solid at release, some bugs but nothing earth-shattering, SQL 2008 R2 the same.
Do note the licensing changes though...

Have you looked at the wait type and resource? (of both that function and any other query you run)
Is the CPU bottlenecked?
Is that functionality written optimally? Are there good indexes?
