change of angle. could you possibly switch the log shipping for availability to use database mirroring, and the set up log shipping to one0_offline, restoring just once a day.

download the upgrade advisor and check out the 2000 installation.
Backout is an uninstall\reinstall SQL2000 so make sure you are in a position to do that. backup up ALL databases before...
