Totally depends on how complex your apps and databases are, for example a sql install can be done in less than 20 minutes and most organisations allocate up to 1/2...

we use sql 2008 here and we have vmware esx, but not production and not sql 2008. I do know that it is supported. but I am not an advocate...

I would take a stab in the dark and say change the -g startup switch to 384, i.e -g384
i think that in sql 2008 it is defaulted to 256MB, this...

If you can post the execution plan for the query from both servers, that should highlight any differences.
Bear in mind that virtual machines will run slower than a physical box...
