Interesting question, thanks, Koen

This may yet serve as motivation to upgrate the existing SQL7 & 2000 databases in our environment.

The install guide does say that it will be installed side-by-side with earlier versions though, if they already exist on your system. Does this mean you'd still be able to connect to SQL Server 2000 in SSIS 2012 using the previous Native Client?

I believe you can. Haven't tested it myself to be honest (I don't have SQL 2000 installations).
But I think it is interesting to know. Say your planning to migrate some 2000 instances to a new server. You install SQL Server 2012 on the new server and fire up SSIS to move all the data. Whoopsies :-D
