OK Peddie you got me searching for more config info.

After reading to the bottom of the page in the link you provided I saw that the email To filed is configurable - however it didn't take any notice when I added a default To field.

But then I saw SendEmailToUserAlias and this was set to True. This means if you subscribe it automatically adds your login name. If you change it to false it leaves the To field blank and allow the user to change it.

Thanks for prodding me in the right direction - I had given up on this one.
