Looking at various options, obviously looking for the least amount of work for the biggest bang. Re: table.field definition/explanations, it seems like extended properties is an option, but then a separate 'document-er' is needed to create a doc that's easily accessible...
FWIW, I was a little amused by the fact that searching for Data dictionary did not return any direct results in the forums.

I just found quite a few results searching for the same. I filtered the search to just sqlservercentral.com and got over 1000 hits. I used this for the search criteria:
Data dictionary "sql server" site:sqlservercentral.com
If you remove the site filter, you can get over a million hits. Try those searches - there are quite a few different approaches other than extended properties. And there are some queries when I was searching...depends on what you are looking for so try the searches and see if you find something along the lines of what you are looking for.
