Is there a way to find out what procedures / jobs drop, create, or update a particular table?

You can use SQL search, the free tool from redgate. It should search just about anything you listed although I am not sure it will find t-sql in a job.

Query sys.sql_modules and msdb.dbo.sysjobsteps these will contain the definition of any proc trigger etc and any commands within job steps.
