hi folks,
I am new in my company and find out we have a sql 2005 standard RMT version instance installed on vmware.
If i want to upgrade this instance to sp3, can I direct apply sp3 to it and that's it.
or i have to apply sp2 and sp3 to call it successful upgrade.

You just apply SP3. It is a cumulative update

here is I found from List of the bugs that are fixed in SQL Server 2005 Service Pack 3
If you are upgrading from SQL Server 2005 SP2 Cumulative Update 10 or from SQL Server 2005 SP2 Cumulative Update 11, you must apply a post-SQL Server 2005 SP3 cumulative update after you upgrade to SQL Server 2005 SP3 to obtain all the fixes.
if is it means after sp3, i need install sp2 cumulative update 10 or 11.
also, has sp3 mature enough, or most people still patch sp2 in their server?

Since you are still at RTM version this would not apply to your instance of SQL. Once you update to SP3 running Windows Update against the server will go out and pull in the SP3 cumulative updates that your server may need. Then you can research each of those to find out if they would need to be applied to your server.
Prior to applying SP3 be sure to backup + backup + backup.
