I am currently using 2005 management studio but I need to replace my current studio to an instance of 2008 on my pc. Would I be able to work on sql server 2005 instances?

That is a yes/no question.
Yes you can deal with SQL 2005 Instances for the database engine. I do it everyday.
But you cannot connect to a SSIS 2005 server, see: https://connect.microsoft.com/SQLServer/feedback/ViewFeedback.aspx?FeedbackID=363010
And I can't remember for SSRS, I think you can, I'm not 100% sure about this one because I can't remember testing it.

My main concern is maintaining and editing maintenance plans in SSMS 2008 that were created in sql 2005 SSMS.

I think you might have a problem. I'm am 99% sure that the 2008 SSMS will not open them. I tried this recently. It didn't give me an error, but it didn't do anything else either..
I think you'll need a SQL 2005 tools install in addition to the SQL 2008 install..

I have both tools, but that seems pretty inconvenient. Not many are going to migrate all sql 2005 databases to sql 2008 overnight.

It is inconvenient and if you have SQL 2005 and 2008 SSIS servers you have to use the SSMS that is for that version.. It is rough..

I don't have Integration Service instances to deal with, just maintenance plans created in sql 2005 which are still in sql 2005 servers that I'd like to manage and edit in Sql Server Management Studio 2008 ( so I don't have to keep two versions of SSMS open all the time )
