I've inherited a server that has SS 2005 on it, but Analysis Services was never installed. Can I do that now as a separate add-in, or do I have to uninstall SS and then re-install the whole thing?

You can add AS from Add/Remove Programs in Control Panel. Select MSSQL Server 2005 and then click Change. But depending on which Service Pack level your server is you might run into problems. I remember a case with SP1 there it wouldn't let us install AS. It's supposed to be solved in SP2 but I never had to try.
Also before you install think if you really want AS on the same server as the Database Engine. I usually advise to use a separate server because both can be very memory intensive.

Analysis Services did not appear on the list of available components to install. I'm un-installing and re-installing (on the same server, it's got lots of room).
