I've just been introduced to the world of SQL. I've a list of servers we are responible for, but I'm sure there are other out there but we we just don't know about until they go down. What would be the easiest way to determine this?

You could try using the New SQL Server Registration wizard in Enterprise Manager. Start it and click on the elipse (...) next the the server name box. It will list active SQL Server instances on a network.
You could also use the free SQL Check utility available for download from Microsoft. http://support.microsoft.com/kb/814461/en-us Ignore the part that talks about finding Slammer vulnerable instances. It will list all instances on a network.
