Is there an easy way to document and export the various SSAS server settings?

Your settings are all in a file called MSMDSRV.INI which will be located in the location specified in the DataDir property on your AS instance. As for documenting it, it's just an XML file so you can query it whichever way is most comfortable for you and use the output as your documentation.

Thanks, but I can't find the item in the specified directory.

It should be in a folder called Config in the Datadir location.
