I have mirrored databases at an off-site location and perform daily full back-ups burnt to disc how safe is my plan.What do you recommend?

Have you tested it? If not, that plan is not worth the paper it's printed on. If so, could you mean the downtime and data loss SLAs you have in place?

If you tested the plan and managed to make all the SLAs involved, then it works. If you couldn't, it needs revising. That's what it comes down to in the end.
