  How do I include the current date on a filename of a file that gets produced when you've created a subscription.

  eg. SalesReport_20130101.xlsx

  On SSRS 2005?

  You can do this by creating a data-driven subscription.

  Under delivery options you can use a value from your reports resultset to create a dynamic filename.

  But be aware dat-driven subscriptions are only available in Enterprise Edition.
