Licensing for SQL Server is all about paper, the instances themselves have no idea how they are licensed.Go speak with whoever did the software purchasing or is responsible for vendor contracts.
You'll have to do some matching up with what was bought v what is being used and installed. Overall, this means a bunch of work that will be out of date quickly as new instances are added.
